Hi, I’m Chef Nicole,
I have been passionate about food for as long as I can remember. It led me to the Cordon Bleu School of Cooking in Paris, France after which I relished an epic, 5-year journey as a professional cook in some of the most famous kitchens in the world.
And it was great! Until it wasn’t.
Somewhere along the way, stress and demands from career and family began to eclipse the joie de vivre I’d once found in food. My creativity went flat. My intuition – always one of my strongest support systems – all but dried up.
I was struggling to find time to prepare simple, nourishing meals to enjoy with my family. I began choosing what was quick and easy or something that “wouldn’t make me fat,” rather than what felt inspiring and savor-worthy.
It was awful. I felt exhausted on every level.
Is this really just how it’s going to be?
My answer: hell no. This “experience” just won’t cut it.
The journey back was filled with turns that forced me to slow down and lots of unexpected twists. Kind of like a meandering country road dotted with overflowing farm stands that I love so much.
It called me to look closely. It called me to get curious. It called me to try and fail and try again. It called me to dig deep.
It called me to change some deeply rooted ways of thinking, and – a big one – to upgrade my relationship with food.
